Flatfish Roll Gyotaku(take a fish print) Senbei
Small flounder caught off the coast of Miyako is carefully prepared one by one while being cooled in clean, soft water with few impurities from Mt. Hayachine, and then dried slowly over a period of two weeks to develop the flavor. The dried flounder, packed with flavor, is then hand-grilled in several batches, one by one, in a batter made with plenty of akasha shrimp and shiba shrimp caught off the Chita Peninsula, which faces Mikawa Bay and Ise Bay in Aichi Prefecture, also known as the "Shrimp Peninsula."
